Everyone knows that the Yorkshire pudding is the best part of a roast beef dinner and this recipe puts it centre stage by supersizing our favourite roast dinner addition. Made with a seasoned batter that’s left to rest for perfect crispiness and then baked in the oven until golden brown, it then can be filled with your roast dinner favourites. Ingredients

  • 5 eggs
  • 200 ml of whole milk
  • 250 g of plain flour, sieved
  • 6 tbsp of vegetable oil

Method

  • Step 1

    In a mixing bowl, mix together the eggs, milk, ½ tsp salt, ½ tsp coarse ground black pepper and 50ml cold water with a whisk. Gradually add the flour and whisk well for 2 mins or until the mixture is smooth and has no lumps. If you have time, leave the batter in the fridge overnight as this results in a greater rise, flavour and texture.
  • Step 2

    In two 20cm cake tins or cast iron skillets, add the vegetable oil and place in the oven for 5 mins to get the oil piping hot, then pour in half of the batter into the middle of each tin or skillet and bake for 20 mins in a preheated oven at 230ºC/210ºC fan/gas 8. until it’s crisp and golden brown.
  • Step 3

    Serve with roast beef, vegetables and gravy.
