Gin & Tonic Cured Salmon

Gin & tonic cured salmon makes for a quirky and delicious starter or light lunch when served with homemade soda bread, Sprite-pickled Cucumber and a lightly dressed salad. The salmon is cured in a blend of lime zest and juice, salt, sugar, dry gin and Schwepps Slimline Tonic Water. You can even experiment with different gins to discover new and interesting flavour dimensions.

Ingredients

  • 2 tbsp of salt
  • 2 tbsp of caster sugar
  • 2 limes, zested and juiced
  • 4 tbsp of schwepps slimline tonic water
  • 4 tbsp of dry gin
  • 500 g of skin-on, boneless salmon
  • 3 tablespoons of olive oil
  • 70 g of salad leaves
  • 1 small loaf of bread, sliced

Method

  • Step 1

    Mix the salt, sugar, half the lime zest and juice, tonic water and gin together in a small dish.
  • Step 2

    Line a non-metallic dish with 2 sheets of cling film, making sure there is an overhang, and set the salmon skin-side-down on top.
  • Step 3

    Pour the cure over the salmon and rub it in to make sure the salmon flesh is fully coated.
  • Step 4

    Tightly wrap the salmon in the excess cling film, set another dish on top and weigh it down with tins or weights and set it in the fridge for 24-36 hrs, turning the salmon over halfway through.
  • Step 5

    Mix the remaining lime zest, juice, oil and a pinch of salt and coarse ground black pepper together in a small bowl or jug. Toss with the salad just before serving.
  • Step 6

    When you are ready to serve, remove the salmon from the fridge, wipe off the cure using kitchen towel and pat dry. Thinly slice the salmon and arrange it on a serving board. Serve with soda bread, crème fraîche and salad.
