This ginger loaf cake, with its warming spices , is the
perfect accompaniment for the delicious Speakeasy alcohol-infused ice cream. Time and servings

Ingredients
- 175 g of unsalted butter
- 200 g of caster sugar
- 3 tablespoons of golden syrup
- 250 ml of milk
- 250 g of plain flour
- 1 tbsp of ground ginger
- 1 tsp of ground allspice
- 1 tsp of bicarbonate of soda
Method
Step 1
Grease and Flour a 20cm x 10cm loaf tinStep 2
Preheat oven to 180cStep 3
Gently heat and stir the butter, sugar and golden syrup in a small saucepan, until fully combinedStep 4
Bring the mixture to the boil then remove from heat and set asideStep 5
Sieve the flour, bicarbonate of soda and spices into a large bowlStep 6
Stir in the liquid mixture until just combined togetherStep 7
Pour the mix into the prepared loaf tinStep 8
Reduce oven temperature to 160C and place loaf tin in the oven Bake for 1 hour or until the top of the loaf springs back when lightly touchedStep 9
Serve warm with a generous scoop of Ice Cream
