
Ginger Steak Stir-fry with Brown Rice Noodles

This Ginger Steak Stir-fry is a super speedy lunch or dinner when you need something packed with flavour and a healthy vibe. Stir-frying the lean steak keeps it super juicy and tender. We've served it with rainbow veg for a delicious crunch and brown rice noodles for that fibre boost.Time and servings

Ingredients
- 50g brown rice noodles
- 2 tbsp oyster or black bean sauce
- 1 tbsp less salt soy sauce, plus a splash
- 1 tbsp Shaoxing rice wine or dry sherry
- 2 x 100g extra lean steak, thinly sliced
- 2 tsp toasted sesame oil
- 3cm ginger, grated or cut to matchsticks
- 1 red chilli, deseeded and thinly sliced
- 3 garlic cloves, thinly sliced
- 15g sesame seeds, toasted
- 250g stir fry veg of your choice
- 1 salad onion, finely sliced
Method
Step 1
Cook the noodles to packet instructions, drain well then set aside.Step 2
Mix the oyster/ black bean sauce in a small bowl with the soy sauce and rice wine. Add the steak then toss to coat.Step 3
Heat a wok or frying pan over medium-high heat. Add 1 tsp oil then fry the ginger, chilli and garlic for 1 min. Add the steak, reserving the sauce, and fry for 1-2 mins more. Using a slotted spoon, remove from the pan and set aside.Step 4
Add the remaining oil to the pan and tip in the veg, fry for 2-3 min until just tender.Step 5
Tip the beef, noodles and remaining sauce to the pan and toss together to coat. Serve sprinkled with sesame seeds, salad onion and a splash of extra soy, if you like.
