
Gingerbread Men

Gingerbread men are traditionally made during winter, using warming spices such as ginger, cinnamon, cloves and nutmeg.This is a good recipe to make with children.Time and servings

Ingredients
- 185 g of plain flour
- 1 tsp of ground ginger
- 0.5 tsp of bicarbonate of soda
- 50 g of butter
- 100 g of caster sugar
- 1 egg yolk
- 2 tablespoons of icing sugar
- 0.5 lemon, juice only
- 1 handful of raisins for decoration, alternatively use small sweets
- 2 tablespoons of golden syrup
Method
Step 1
Preheat the oven to 175˚C (350˚F/Gas mark 4).Step 2
Mix together the flour, ginger and bicarbonate of soda. Rub in the butter until the mixture resembles breadcrumbs.Step 3
Stir in the sugar. Mix the egg yolk and golden syrup together and add to the mixture. Stir to mix, and then use your hands to work into a ball of dough.Step 4
Sprinkle a little flour onto a clean work surface and knead the dough until it is smooth. With a rolling pin, roll out the dough until it is 5 mm (¼ in) thick. Use a gingerbread man cutter to cut out shapes. Transfer the gingerbread men to a greased, lined baking tray.Step 5
Bake for 10–12 minutes until golden brown. Remove from the oven and leave the gingerbread men for 5–10 minutes to allow them to harden before moving to a cooling rack. Once the biscuits have cooled, mix the icing using icing sugar and freshly squeezed lemon juice. Pipe onto the gingerbread men to make faces and clothes. Use raisins or small sweets for buttons.
