
Glazed Pork Satay Skewers

Tender pork fillet served with a flavoured dressing made of Hellmann's mayonnaise and soy sauce.Time and servings

Ingredients
- 600 g of pork fillet
- 2 tsp of peanut butter
- 2 tbsp of oil
- 3 limes
- 2 tbsp of hellmann's real mayonnaise
- 1 tbsp of runny honey
- 2 tbsp of reduced salt soy sauce, for the marinade, plus 2 tsp for the satay
- 150 ml of reduced fat coconut milk
- 1 tsp of red curry paste
Method
Step 1
Cut the pork fillet into bite sized chunks, then place in a medium sized bowl, add the oil and 2 tbsp of soy sauce. Leave to marinade in the fridge for a couple of hours.Step 2
In a small saucepan, heat the coconut milk with the curry paste and cook for a couple of minutes. Then stir in the honey, peanut butter and 2 tsp of soy sauce.Step 3
Remove from the heat and leave to cool. Add the mayonnaise and lime juice, and mix together to make the satay sauce.Step 4
Thread the pork onto 8 medium sized skewers.Step 5
Grill the pork skewers for 3-4 minutes on each side or until the pork feels firm to the touch and there is no sign of blood.Step 6
Brush the pork with a little of the satay sauce, and cook for a further 30 seconds on each side, or until the sauce starts to caramelise.Step 7
Serve the pork with the rest of the satay sauce and lime wedges.
