Ingredients
- 50 g of dessicated coconut
- 0.5 tsp of cream of tartar
- 0.25 tsp of bicarbonate of soda
- 75 g of soft brown sugar
- 2 limes, zest and juice
- 40 g of caster sugar
- 50 g of gluten free bread
- 25 g of ground almonds
- 4 medium eggs, beaten
- 75 ml of vegetable oil
Method
Step 1
Place the bread in a processor and blitz until it is fine crumbs.Step 2
Tip into a mixing bowl and add the ground almonds, coconut, cream of tartar, bicarbonate of soda and the brown sugar. Mix.Step 3
Beat together the oil and eggs and the finely grated zest of one lime. Add this to the breadcrumb mixture and stir well.Step 4
Divide the mixture between the cake cases.Step 5
Bake in the preheated oven for 20-25 minutes, until golden and risen.Step 6
While the cakes are cooking place the caster sugar, the remaining zest and the lime juice in a saucepan and heat gently to dissolve.Step 7
Bring to the boil and cook until the mixture has reduced a little and become syrupy. Remove the cakes from the oven.Step 8
Prick each cake with a skewer several times and then spoon over the syrup. Serve when cool.
