These easy-to-make, gluten-free sultana scones are a great option to take to a picnic or family outing. They’re ideal for those who need to avoid gluten but want to enjoy a delicious jam and clotted cream-topped treat!Time and servings

Ingredients
- 320 g of gluten-free self-raising flour, plus extra for dusting
- 60 g of unsalted butter, chilled and cubed
- 1 tsp of xanthan gum
- 1 tsp of gluten-free baking powder
- 75 g of caster sugar
- 2 large eggs, plus 1 extra, beaten, for glazing
- 1 tsp of vanilla extract
- 100 g of whole milk
- 75 g of sultanas
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. In a food processor, add the flour, butter, xanthan gum, ¾ tsp sea salt, baking powder and sugar and pulse until you get fine breadcrumbs. You can also use your fingertips in a mixing bowl if you don’t have a food processor.Step 2
Add the 2 eggs, vanilla extract and then the milk in a steady stream, mixing continuously while you add it. Add the sultanas and use your hands to bring the mixture together into a ball of dough.Step 3
On a flour-dusted surface, roll out your dough to roughly 2cm-thick and cut your scones out using a 4-5cm cutter, then place them on a lined baking sheet. Brush the tops with egg wash and then bake in the oven for 15 mins until the tops are golden brown.Step 4
Serve warm with strawberry jam and clotted cream.
