
Gnocchi and Pesto Vegetable Soup

This comforting vegan Gnocchi and Pesto Vegetable Soup from OcadoLife recipe editor Lauren Hoffman makes a great starter or light lunch. It’s packed with plant points and full of flavour. We’ve used frozen veg for convenience but it’s just as nice with a handful of chopped, fresh veg.

Ingredients
- 500ml vegan broth
- 2 x 160g packs frozen steamed vegetables
- 225g fresh spinach gnocchi
- 4 tsp vegan basil pesto
- 4 tsp plant-based grated cheese
Method
Step 1
Bring the broth to a simmer in a wide pan fitted with a steamer basket. Add the veg and gnocchi; cover and steam for 3 mins or until the carrots are tender and the gnocchi cooked.Step 2
Divide the veg and gnocchi between shallow soup bowls, then ladle over the broth. Dollop over or stir in 1 tsp pesto per bowl and scatter with 1 tsp plant-based cheese.
