
Gnocchi with harissa pesto

Ingredients
- 450 g of gnocchi
- 2 tbsp of waitrose love life mixed seeds
- 3 tbsp of belazu vegan rose harissa pesto
- 1 tbsp of extra virgin olive oil
- 1 tbsp of vegan parmesan, (or nutritional yeast) to serve
- 1 handful of fresh basil
Method
Step 1
Heat a frying pan (with a lid) over a medium heat and add the mixed seeds. Toast them gently with the lid on (because they pop), shaking the pan occasionally for around 4-5 mins until they are golden and smell nutty.Step 2
Bring a large saucepan of water to the boil. Drop in the gnocchi and cook for 1 min (they should start to float). Then drain into a colander and return to the empty saucepan.Step 3
Add the harissa pesto and extra virgin olive oil and mix gently to coat the gnocchi. Divide between two serving dishes and sprinkle over the toasted mixed seeds.Step 4
A little vegan parmesan and some fresh basil leaves are a lovely addition too.
