Gochujang Rarebit Crumpets

It makes a great savoury breakfast, topped with a poached egg.

Ingredients

  • 20g unsalted butter
  • 20g plain flour
  • 110ml Japanese lager
  • 1½ tbsp gochujang
  • 1 tsp soy sauce
  • ¼ tsp Dijon mustard
  • 150g cheddar, grated
  • 4 crumpets
  • 4 eggs
  • 2 salad onions, sliced

Method

  • Step 1

    Put a pan of water on to boil, then reduce to a simmer. Preheat the grill to high.
  • Step 2

    Melt the butter in a pan, stir in the flour and cook for 1 min. Steadily whisk in the lager, then add the gochujang, soy sauce and mustard until combined. Stir in the grated cheddar and remove from the heat.
  • Step 3

    Meanwhile, toast the crumpets and crack the eggs into the simmering water to poach for about 3 mins. When the crumpets are golden, put them in a roasting tray, pour over the cheese mixture and place under the hot grill.
  • Step 4

    Grill until bubbling and golden, then serve, topped with the poached eggs and a sprinkle of sliced salad onions.
