This ice cream recipe by chef and author Josef Youssef (who’s worked at hospitality heavyweights like The Connaught, The Dorchester and The Fat Duck) has banana lovers talking. It combines the yellow fruit, which aids dopamine production (otherwise known as the chemical that makes you feel happy), with loads of lip-smackingly good stuff. We’re talking a sprinkling of honey roasted peanuts, a dash of popping candy, and even a chunk of banana bread (see why the banana fans are all over it?). It’s all topped off with an extra bit of happiness – the chocolate type. Did you know chocolate contains tryptophan, which is known to stimulate serotonin production? That’s an extra spoonful of happiness in every bite.

Ingredients

  • 80 g of dairy-free ice cream
  • 60 g of h. forman & son banana bread
  • 20 g of tony's chocolonely white raspberry popping candy
  • 15 g of sensations californian honey & salt roasted sharing peanuts
  • 6 g of organix banana puffcorn finger food toddler snack
  • 3 g of liobites freeze dried banana crisps
  • 11 g of dr. coy's chocolate covered cherries

Method

  • Step 1

    Slice the banana bread into bite-size pieces and place in a bowl.
  • Step 2

    Top with scoops of the Banilla ice cream, then break the chocolate bar up into smaller chunks and sprinkle it over the top.
  • Step 3

    Roughly chop or crush the peanuts and add them to the dish. Then, add the banana puff corn and freeze-dried banana crisps.
  • Step 4

    Finish your ice cream off with a handful of chocolate-coated cherries.
