This colourful, wholesome recipe combines pantry and fridge essentials with nutritious grains for an easy Mediterranean-inspired dish. Plus it's ready and on the table in less than 10 minutes - perfect for a quick midweek dinner with the family, or even as wholesome lunch.

Ingredients

  • 250 g of microwaveable grains, of your choice
  • 1 squeeze of lemon
  • 2 tbsp of pitted black olives
  • 5 cherry tomatoes, halved
  • 50 g of goat's cheese
  • 1 dash of olive oil
  • 2 tbsp of roasted red peppers, chopped (from a jar)
  • 1 handful of fresh parsley, leaves only

Method

  • Step 1

    Place half the pouch of grains in a bowl (save the other half for tomorrow’s lunch). Dress with the lemon and olive oil.
  • Step 2

    Add the roasted red peppers, pitted black olives, cherry tomatoes, parsley and crumble over the goat’s cheese.
  • Step 3

    Gently mix it all together, season to taste and tuck in. If you’re extra hungry, serve with pitta triangles.
