
Grains with Roasted Peppers & Goat's Cheese

This colourful, wholesome recipe combines pantry and fridge essentials with nutritious grains for an easy Mediterranean-inspired dish. Plus it's ready and on the table in less than 10 minutes - perfect for a quick midweek dinner with the family, or even as wholesome lunch.Time and servings

Ingredients
- 250 g of microwaveable grains, of your choice
- 1 squeeze of lemon
- 2 tbsp of pitted black olives
- 5 cherry tomatoes, halved
- 50 g of goat's cheese
- 1 dash of olive oil
- 2 tbsp of roasted red peppers, chopped (from a jar)
- 1 handful of fresh parsley, leaves only
Method
Step 1
Place half the pouch of grains in a bowl (save the other half for tomorrow’s lunch). Dress with the lemon and olive oil.Step 2
Add the roasted red peppers, pitted black olives, cherry tomatoes, parsley and crumble over the goat’s cheese.Step 3
Gently mix it all together, season to taste and tuck in. If you’re extra hungry, serve with pitta triangles.
