Ingredients
- 100g caster sugar
- 2 bay leaves, plus extra to garnish
- 30ml clementine juice
- 80ml pink grapefruit juice
- 1 pinch pink himalayan salt
- 1 lime, squeezed to give 1 tbsp juice
- 50ml CleanCo Clean T Non-alcoholic Agave Spirit
- 150ml soda water (approx.), to top up
- 1 slice pink grapefruit, to garnish
Method
Step 1
Make a bay leaf syrup: warm 100ml water with the caster sugar in a pan over a low heat, stirring to dissolve; add the 2 bay leaves and simmer for 5 mins; leave to cool.Step 2
Put 2 tsp of the bay syrup in a cocktail shaker or lidded jar with 1 ice cube, the clementine and pink grapefruit juices, the salt and lime juice. Shake briefly, then strain into a glass over ice.Step 3
Add the CleanCo Clean T Non-alcoholic Agave Spirit and top up with soda water. Pop in a grapefruit slice and bay leaves to serve. You can store the syrup chilled for 1 month.
