Grapefruit Spritz

Ingredients

  • 100g caster sugar
  • 4 thyme sprigs
  • 600ml pink grapefruit juice
  • 1 litres soda water
  • 0.5 red grapefruit, cut into wedges, to garnish

Method

  • Step 1

    In a small pan, combine the sugar, thyme and 175ml water; simmer over a gentle heat for 5 mins 
or so, until the sugar has dissolved and the liquid is thick and syrupy. Remove and leave to cool. Discard the thyme and put the syrup in the fridge until needed (it’ll keep chilled in an airtight jar for 2 weeks).
  • Step 2

    To serve, add 20ml sugar syrup to each glass, followed by 100ml grapefruit juice. Stir to mix; put in plenty of ice and top up with soda water. Add the grapefruit wedges.
