
Greek-Style Slow-Roasted Lamb

Ingredients
- 2kg of leg of lamb
- 1 tbsp of olive oil
- 2 tsp of sea salt flakes
- 4 garlic, 3 heads plus 2 garlic cloves
- 375ml of chicken stock
- 125ml of dry white wine
- 12 new potatoes, halved
- 3 lemons, halved
- 8 vine tomatoes
- 175g of kalamata olives
- 2 red onions, cut into 6 wedges
- 5 rosemary sprigs
Method
Step 1
Preheat the oven to 180C/gas mark 4.Step 2
Place lamb in a large roasting pan, drizzle with oil and sprinkle on salt. Cut slits about 2cm deep over the surface. Mix two crushed garlic cloves and two sprigs of chopped rosemary together. Rub into the slits.Step 3
Drizzle stock and wine around lamb and cover with foil. Cook for an hour.Step 4
Take out of oven and spoon juices over lamb. Add onion, potatoes, lemon, garlic and olives, cover with foil and roast for another hour. Remove foil, add tomatoes and roast for a further 30 mins or until lamb is golden and tender. Remove from oven. Cover with foil and set aside for 15 minutes to rest.Step 5
Slice the lamb and arrange on plates with the vegetables from the pan and drizzle with the pan jucies. Serve immediately.
