
Green Frenk Chilli Tacos

This 10-minute recipe is quick and easy when wanting to create lunch in a hurry. For that extra kick add the Green Frenk Chillies to the Mayonnaise as well as the garnish. Looking for more taco recipes? Look no further.Time and servings

Ingredients
- 3 cooks&co green frenk chillies, 2 for garnishing & 1 for the mayo
- 3 tablespoons of plant based mayo
- 120 g of mushrooms
- 2 cloves of garlic
- 1 red pepper
- 1 small red onion
- 6 small wraps
- 1 tsp of smoked paprika or fajita seasoning mix
- 1 large lime
- 15 g of fresh coriander
- 1 handful of toasted seeds
Method
Step 1
Prep the veg by thinly slicing the peppers and onions and roughly chopping the mushrooms.Step 2
Add the veg to a frying pan with a generous drizzle of olive oil and fry for around 4-5 minutes on a high heat.Step 3
Thinly slice / mince the garlic then add to the pan with the mushrooms and fry for a further 1 minute before adding the smoked paprika / seasoning.Step 4
Reduce to a low heat and leave whilst preparing the tortillas.Step 5
Place a shallow pan on a high heat then add the tortilla and toast for around 1 minute, then shape into a taco whilst still hot and set aside, repeat until all 6 are created.Step 6
Create the mayo by simply mixing the 1/2 squeezed lime juice, 1 finely chopped Green Frenk Chilli and the mayo together.Step 7
Stuff the tacos with the veg mix then garnish with a generous spoon full of the chilli mayo along with 2 finely sliced Green Frenk Chillies, coriander and toasted seeds.
