In the mood for a super-swift Italian-inspired supper? Try this vibrant Green Gnocchi – it’s vegan, gluten free and will only leave you one pan to wash up! Frying the gnocchi gives them a nutty bite to match the crisp texture of the asparagus and fine green beans.

Ingredients

  • 250g gluten-free spinach gnocchi
  • 1 tbsp olive oil
  • 110g extra-fine asparagus, halved
  • 60g frozen fine green beans
  • 3 tbsp gluten- and dairy-free basil pesto
  • 1 large handful watercress
  • parmesan flavour non-dairy cheese alternative, grated

Method

  • Step 1

    Heat the olive oil in a large frying pan. Add the gnocchi and asparagus and cook for 5 mins.
  • Step 2

    Add the frozen beans to the pan and stir, flipping the gnocchi; cook for 2-3 mins until tender.
  • Step 3

    Stir in the pesto and watercress; serve immediately, topped with the grated cheese alternative.
