Ingredients
- 250g gluten-free spinach gnocchi
- 1 tbsp olive oil
- 110g extra-fine asparagus, halved
- 60g frozen fine green beans
- 3 tbsp gluten- and dairy-free basil pesto
- 1 large handful watercress
- parmesan flavour non-dairy cheese alternative, grated
Method
Step 1
Heat the olive oil in a large frying pan. Add the gnocchi and asparagus and cook for 5 mins.Step 2
Add the frozen beans to the pan and stir, flipping the gnocchi; cook for 2-3 mins until tender.Step 3
Stir in the pesto and watercress; serve immediately, topped with the grated cheese alternative.
