This vegan green goddess toast recipe by TikTok creator @lockdowncuisine makes a brilliant lunch, snack or light dinner. It’s full of delicious ingredients like vibrant fresh herbs, cashews and walnuts, sourdough toast and crunchy cucumber and cabbage. You could make the topping in advance and even double the recipe to keep it in the fridge for a few days’ worth of lunches. The nutritional yeast brings a nutty, umami-rich depth to the sauce and is a great ingredient to experiment with in recipes where you’d usually use hard cheeses such as parmesan.

Ingredients

  • 7 tbsp of olive oil
  • 3 slices of sourdough
  • 0.5 white cabbage, cored, roughly chopped
  • 0.5 cucumber, cut into small chunks
  • 4 shallots, chopped
  • 4 tbsp of nutritional yeast
  • 3 tbsp of rice wine vinegar
  • 2 garlic cloves
  • 25 g of dill, fronds only
  • 25 g of chives, chopped
  • 0.5 lemon, juiced
  • 1 tsp of salt
  • 2 tsp of coarse black pepper
  • 2 tbsp of cashew nuts
  • 2 tbsp of walnuts
  • 1 large handful of baby spinach
  • 25 g of basil, leaves only

Method

  • Step 1

    Heat 2 tbsp oil in a large frying pan over medium-high heat and fry the bread slices on both sides until golden and crispy.
  • Step 2

    In a large mixing bowl, combine the cabbage and cucumber.
  • Step 3

    Add the remaining oil, shallots, nutritional yeast, rice wine vinegar, garlic, dill fronds, chives, lemon juice, salt, pepper, cashews, walnuts, spinach and basil leaves to a blender and blend until smooth.
  • Step 4

    Add the green goddess sauce to the bowl with the cabbage and cucumber and mix well.
  • Step 5

    Top the toast with the green goddess topping and enjoy.
