
Green-with-Envy Halloween Cocktail

Raise a glass to Halloween with a Green-with-Envy Cocktail, conjured up by Mam Sham supper club hosts Maria Georgiou and Rhiannon Butler. “Fragrant lime-leaf green tea meets vodka in this sharp, green concoction. It’s floral, punchy and ready to cause a scene. Scale it up for a party-sized potion.” Be sure to leave extra time for cooling and chilling the tea first. And for an extra spooky flourish, garnish glasses with a lime bat: cut a shallow slit along the length of a lime, then gently prise it open and scrape out the flesh, keeping the peel whole; carve out a bat shape, bending the wings upward.

Ingredients
- 1 green tea teabag
- 4 lime leaves
- 2 (approx.) limes, ½ chopped (rind and all), 1½ juiced (to give 40ml), plus extra to garnish (optional)
- 1 tbsp caster sugar
- 100ml vodka
- 2 maraschino cherries, to garnish
Method
Step 1
Make up 100ml of green tea, drop in the lime leaves and leave to steep and cool; chill.Step 2
In a cocktail shaker or clean lidded jar, muddle the chopped lime with the sugar. Add the vodka, green tea, 40ml lime juice and a good handful of ice cubes. Twist the lid on; shake well for 15 secs to chill.Step 3
Strain into glasses, over ice if preferred. Garnish with maraschino cherries and lime bats, if you like.Step 4
For the bat garnish, if making, cut a shallow lengthwise slit in a lime. Gently prise it open and scrape out the flesh to keep the peel whole. Carve out a bat-shaped garnish with wings and small body. Bend the wings upward.
