
Griddled Prawns with Lime and Rowse Honey Marinade

An extra special dish for the barbecue; these prawns are cooked in minutes and taste delicious marinated with honey, chilli and garlic then tossed with a soy dressed salad.Time and servings

Ingredients
- 3 tbsp of rowse honey pure & natural or australian, 2 tbsp for the marinade and 1 tbsp to serve
- 2 limes, grated rind of 1 and juice of both
- 1 mild red chilli, deseeded, finely chopped
- 1 garlic clove, finely chopped
- 2 tbsp of fresh coriander, chopped (optional)
- 1 pinch of salt
- 500 g of frozen raw peeled prawns, defrosted, rinsed and drained
- 2 tbsp of olive oil
- 200 g of romaine lettuce, torn into pieces
- 1 tbsp of soy sauce
- 1 pinch of black pepper
Method
Step 1
To make the marinade, mix the honey, oil, grated lime rind, half the lime juice, chilli and garlic together in a shallow bowl. Add the coriander, salt and pepper, mix together then add the prawns and toss together. Cover with cling film and chill in the fridge for 30 minutes.Step 2
Lift the prawns out of the marinade and thread on to metal or soaked wooden skewers. Cook on a medium hot barbecue or under a preheated grill for 5-7 minutes turning the prawns once or twice and brushing with the marinade until the prawns are bright pink all over and cooked through.Step 3
Mix the remaining lime juice, honey and soy sauce together in a bowl, add the salad and toss together. Spoon on to four plates. Slide the prawns off their skewers on to the salad and serve immediately.
