
Griddled Salad

The perfect warm summer salad made with squeaky halloumi, courgettes and crispy lettuce, dressed in a lemony garlic dressing. Olives and asparagus finish this elegant salad, making it hearty enough to enjoy for both lunch and dinner. Serve with crusty bread to mop up any leftover dressing.Time and servings

Ingredients
- 250 g of halloumi, cut into 8 slices
- 450 g of asparagus, woody ends trimmed
- 2 courgettes, cut lengthways into 1/2 cm slices
- 2 gem lettuces, cut lengthways into quarters
- 2 cloves of garlic, crushed
- 1 lemon, zest and juice
- 2 tbsp of flat leaf parsley, roughly chopped
- 2 tbsp of olive oil
- 1 handful of black olives, sliced
Method
Step 1
Place the halloumi slices, asparagus, courgettes and lettuce quarters in a large bowl.Step 2
Mix the garlic, oil, lemon zest and parsley together in a separate bowl, then pour over the cheese and veg, tossing it all together.Step 3
Heat a griddle pan on a high heat until smoking. Griddle the halloumi and veg in batches until lightly charred (the lettuce will need 15 secs each side and the rest 1 min each side).Step 4
Once everything is griddled, sprinkle the olives and lemon juice over the salad, season with black pepper and serve.
