
Grilled Chicken with Vegetables, Wholegrain & Quinoa

What’s more, when it’s expertly flavoured with garlic, spices and onion and perfectly cooked every time in just 90 seconds, this makes the ultimate accompaniment to grilled chicken for a light summer meal.Time and servings

Ingredients
- 1 uncle ben’s rice
- 2 chicken breasts
- 1 courgette, sliced
- 100 g of mange tout
- 1 small red chilli, finely sliced
Method
Step 1
Heat a grill to medium-high heat. Brush the chicken breasts with olive oil before placing on grill to cook for about 20 minutes, turning after 10 (Ensure chicken is thoroughly cooked)Step 2
Meanwhile, steam the courgette slices and the mange tout until they retain just enough bite to get your teeth intoStep 3
Squeeze Wholegrain & Quinoa pouch to separate rice, tear 3 cms to vent, then microwave on full power for 90 secondsStep 4
Arrange rice on plate, place grilled chicken on top and courgette and mange tout to the side. Garnish with red chilli slices
