
Grilled Mango and Pineapple on Brioche Toast with Toffee Sauce

Grilling fruit on the barbeque couldn't be simpler and served with this simple toffee sauce it's a perfect treat to end the meal.

Ingredients
- 6 small handful of raspberries, to serve
- 75 g of soft dark brown sugar
- 50 g of unsalted butter
- 8 tablespoons of double cream
- 1 pineapple, peeled, cored and cut into slices lengthways
- 1 mango, peeled and cut into slices lengthways
- 6 brioche rolls, split
- 6 scoops of ice cream, to serve
Method
Step 1
Cook the butter and sugar over a gentle heat until the sugar has melted, then boil for 5 minutes.Step 2
Remove from the heat, stir in the cream and set to one side.Step 3
Place the prepared fruit onto the grill and cook for 2-3 minutes each side.Step 4
Toast the brioche on the grillStep 5
To serve place a toasted roll on each plate and top with grilled fruit, toffee sauce, raspberries and ice cream.
