This Grilled Peach, Maple and Bourbon Punch from cocktail expert Carmen O’Neal is a grown-up chiller containing smoky griddled peaches that pair brilliantly with bourbon. A long drink made for lazy afternoons.

Ingredients

  • 3 ripe peaches, halved
  • 200ml bourbon
  • 1 large lemon, juiced to give 60ml
  • 50ml maple syrup
  • 150ml peach iced tea

Method

  • Step 1

    Grill (or barbecue) the peach halves until charred; leave to cool.
  • Step 2

    Slice 2 of the peach halves and set aside. Blitz the remaining 4 peach halves in a blender with the bourbon, lemon juice, maple syrup and 200ml water until smooth. Strain into a jug, discarding the pulp, and stir in the iced tea.
  • Step 3

    Serve over ice, garnished with the peach slices.
