Ingredients
- 150g fresh pineapple chunks
- 1 tsp coconut palm sugar
- 120g natural kefir yoghurt
- 1 lime, zested, plus a squeeze of juice
- 1 heaped tbsp super seeded granola
Method
Step 1
Preheat the grill to high. Arrange the pineapple chunks on some foil or a tray and sprinkle with the coconut palm sugar. Grill until caramelised; turn the pieces over and repeat. Leave to cool.Step 2
Mix the yoghurt with a squeeze of lime juice and a little zest.Step 3
In a glass, layer up the caramelised pineapple, yoghurt and granola, finishing with some pineapple and a scattering of lime zest. Dig in!
