Grilled Veg With Tahini Yogurt Sauce

Ingredients

  • 3 tbsp of olive oil
  • 2 aubergines, (in 3mm slices)
  • 2 courgettes, (in 3mm slices)
  • 200 g of greek-style natural yogurt
  • 2 tbsp of tahini
  • 1 large of garlic clove, (crushed)
  • 1 lemon, (zest and juice)
  • 1 pinch of chilli flakes

Method

  • Step 1

    Heat a large griddle pan over a high heat. Drizzle with oil and griddle the veg slices for a few mins on each side until charred. Transfer to a serving plate and keep warm in a low oven while you continue to cook any remaining slices.
  • Step 2

    Mix together the yogurt, tahini, garlic and the lemon zest and juice, and season with salt and pepper. Drizzle this over the veg, then sprinkle with the chilli flakes. Serve the remaining sauce in a bowl on the side.
