Ingredients
- 4 slices of aubergine
- 1 tbsp of soft brown sugar
- 2 tbsp of salsa
- 125 g of halloumi, sliced
- 2 bread rolls, halved
- 1 onion, finely sliced
- 1 roasted red pepper, sliced
- 1 tbsp of olive oil
- 2 portobello mushrooms
Method
Step 1
Fry 1 finely sliced onion in a little olive oil for a few minutes until soft and golden.Step 2
Fry 4 aubergine slices in an oiled griddle pan for a few minutes on each side until tender. Set aside, and repeat with 2 portabello mushrooms. In another pan, fry 125g sliced halloumi until golden.Step 3
Add 1 tbsp soft brown sugar, 1 sliced roasted red pepper and 2 tbsp salsa to the onion pan. Cook together for 1 minute until the sugar has dissolved, stirring constantly.Step 4
Spread two split bread rolls with houmous and place the halloumi and aubergine slices on top. Spoon the relish over and serve.
