Ingredients
- 150g halloumi , sliced
- 1 tsp olive oil
- 2 tbsp hot honey
- 4 slices sourdough
- 4 heaped tbsp smoked houmous
- 12 slices cooked beetroot
- 1 handful wild rocket
- 10g mint leaves
Method
Step 1
Fry the halloumi in olive oil for 2 mins each side, until golden.Step 2
Meanwhile, heat the hot honey in a pan for 2-3 mins until syrupy; toast the sourdough. Spread each toast with 1 heaped tbsp houmous and top with the slices of beetroot.Step 3
Cut the halloumi into pieces and arrange on top of the beetroot. Then drizzle with the hot honey, scatter over the rocket and mint leaves and get stuck in.
