
Ingredients
- 200 g of barley
- 300 g of sweet potatoes
- 2 tbsp of olive oil, plus extra for frying
- 1 red cabbage, shredded
- 2 limes, juiced
- 2 tbsp of smooth peanut butter
- 250 g of halloumi, sliced into triangles
- 1 small bunch of coriander, leaves chopped
- 2 red chillies, finely sliced
Method
Step 1
Preheat the oven to 180°C/160°C/gas mark 4. Add the barley to a pan with 1 litre of water, bring to the boil and cook for 50 mins until tender.Step 2
Meanwhile, cut the sweet potatoes into thin medallions and coat in olive oil, salt and pepper. Roast in the oven for 30 mins until tender and caramelised.Step 3
Massage the red cabbage with salt and the juice of 1 lime.Step 4
Combine the peanut butter and juice of the remaining lime with 2 tbsp of boiling water, salt and pepper. Add a small glug of oil to a pan and fry the halloumi on either side for 2 mins until golden brown.Step 5
In a bowl, layer the barley with the sweet potato, pickled cabbage, coriander and halloumi. Drizzle with the peanut dressing and sprinkle on the fresh chillies.
