Ingredients

  • 200 g of barley
  • 300 g of sweet potatoes
  • 2 tbsp of olive oil, plus extra for frying
  • 1 red cabbage, shredded
  • 2 limes, juiced
  • 2 tbsp of smooth peanut butter
  • 250 g of halloumi, sliced into triangles
  • 1 small bunch of coriander, leaves chopped
  • 2 red chillies, finely sliced

Method

  • Step 1

    Preheat the oven to 180°C/160°C/gas mark 4. Add the barley to a pan with 1 litre of water, bring to the boil and cook for 50 mins until tender.
  • Step 2

    Meanwhile, cut the sweet potatoes into thin medallions and coat in olive oil, salt and pepper. Roast in the oven for 30 mins until tender and caramelised.
  • Step 3

    Massage the red cabbage with salt and the juice of 1 lime.
  • Step 4

    Combine the peanut butter and juice of the remaining lime with 2 tbsp of boiling water, salt and pepper. Add a small glug of oil to a pan and fry the halloumi on either side for 2 mins until golden brown.
  • Step 5

    In a bowl, layer the barley with the sweet potato, pickled cabbage, coriander and halloumi. Drizzle with the peanut dressing and sprinkle on the fresh chillies.
