Love a midweek fajita? Try this from-scratch veggie version with everyone's favourite squeaky cheese, halloumi. Using the best of our great-value Ocado Own Range ingredients, with paprika-spiced peppers, onions and bouncy cheese wrapped in warm tortillas, these fajitas are a quick, easy and tasty meal in a hurry. Ingredients

  • 2 tbsp of oil, plus a drizzle
  • 450 g of halloumi, sliced into strips
  • 2 large red onions, sliced
  • 2 bell peppers, sliced
  • 1 avocado, diced
  • 8 tortilla wraps, warmed
  • 1 large garlic clove, crushed or grated
  • 2 tbsp of paprika
  • 1 small red onion, diced
  • 1 tomato, diced
  • 1 lime, juiced, to serve
  • 1 bunch of coriander, chopped, to serve
  • 1 tub of soured cream, to serve

Method

  • Step 1

    Heat a griddle or large pan to a high heat. Brush the sliced halloumi with 1 tbsp olive oil then add in batches to the hot pan for about 2 mins on each side until golden. Set aside.
  • Step 2

    Add the remaining oil to a large pan and add the sliced onion. Cook over a medium heat for 2-3 mins until starting to soften and starting to get a bit of colour. Add the sliced peppers and cook for 5 mins more. Add the garlic and paprika with a splash of water and fry for a further 2 mins until fragrant.
  • Step 3

    Add the halloumi to the pan and cook for a final 1 min.
  • Step 4

    For the salsa, in a small bowl mix together the avocado, red onion and tomato with a drizzle of oil.
  • Step 5

    Divide the halloumi, onions, peppers and salsa between the warmed wraps, and finish with a squeeze of lime, if you like. Serve with soured cream and coriander, if you like.
