
Halloumi Hot Dogs with Mango Salsa

Soft brioche hot dog buns are loaded up with squeaky and deliciously salty halloumi cheese, grilled Mediterranean veg and a fresh pickled and lightly spiced mango salsa in this quick and easy, family friendly meal. Ingredients
- 550 g of veg mix
- 1 mango, chopped into chunks
- 1 large tomato, chopped
- 1 red onion, finely chopped
- 1 fresh jalapeño, finely chopped
- 1 small bunch of coriander, finely chopped
- 1 tsp of white wine vinegar
- 250 g of halloumi, sliced
- 1 tbsp of runny honey
- 4 hot dog buns, sliced
- 1 tbsp of oil, or more
- 1 bottle of hot sauce, to serve
- 1 lime, juiced, to serve
Method
Step 1
To make the salsa, add the mango, tomato, red onion, jalapeños (if using), chopped coriander and white wine vinegar to a bowl. Toss to combine, then pop in the fridge to chill while you make the hot dogs.Step 2
Heat a grill pan over a high heat then add the sliced halloumi and cook in batches for 2-3 mins on each side until dark chars appear. Take off the heat and brush lightly with honey, then leave to one side.Step 3
Coat the Mediterranean veg mix in oil, then in the same grill pan evenly cook in batches until softened and char lines appear.Step 4
Spread hot sauce or tomato ketchup into the sliced buns, then stuff with the veg, halloumi and salsa. Finish with a drizzle of extra sauce and lime juice, if you like.
