
Halloumi Salad Wraps with Tahini Dressing

Ingredients
- 250 g of halloumi
- 1 baby gem lettuce
- 1 handful of radishes, thinly sliced
- 1 handful of cherry tomatoes
- 0.5 cucumber, sliced
- 4 tortilla wraps
- 2 tbsp of tahini
- 1 lemon, juiced
- 1 small clove of garlic, grated
Method
Step 1
Slice the halloumi and place on a griddle or frying pan, over a medium-high heat. Turn when golden.Step 2
Mix together the radishes, cucumber and tomatoes.Step 3
To make the dressing, pace the tahini in a bowl with 1-2 tbsp water and stir until it turns into a grainy paste. Add the lemon juice and grated garlic. Season with salt and pepper and mix well.Step 4
Warm the wraps in a microwave for 30 seconds, spread with a little of the dressing then layer a couple of lettuce leaves on each wrap. Top with the grilled halloumi and vegetables. Fold or roll, then eat right away.
