This ham, cheese and tomato bread and butter bake by Lisa Faulkner is simple to make, uses great-value ingredients and is super comforting. It’s full of gooey melted cheese, delicious honey roast ham and ripe tomatoes, all baked under a mustard-spiked savoury custard until golden brown and bubbling.Tip: You can blitz the bread crusts up into breadcrumbs and pop them into a sandwich bag in the freezer for another recipe.

Ingredients

  • 3 eggs
  • 0.5 tsp of english mustard powder
  • 400 ml of whole milk
  • 50 g of butter, softened
  • 8 slices of hovis best of both worlds medium bread
  • 120 g of mature cheddar cheese, grated
  • 2 tomatoes, thinly sliced
  • 125 g of ocado british wafer thin honey roast ham

Method

  • Step 1

    Preheat the oven to 180°C/160°C fan/gas 4.
  • Step 2

    In a large jug, whisk together the eggs, mustard powder and a generous pinch of salt and coarse ground black pepper. Then, whisk in the milk.
  • Step 3

    Use 40g of the butter to lightly butter the slices of bread on one side. Make sandwiches by layering up a slice of ham, a couple of slices of tomato (seasoned with a pinch of salt and coarse ground black pepper) and a scattering of cheese. Use ⅔ of the cheese for the sandwiches and reserve the rest for the topping. Now, cut each sandwich into 4 triangles by halving them across the diagonal and then halving them again.
  • Step 4

    Use the remaining 10g of butter to grease a 15cm x 20cm oven-proof baking dish or casserole. Transfer the sandwiches to the dish, arranging them however you prefer as long as they’re in a single layer in the dish and tightly packed in, then pour over ⅔ of the custard mixture. Place in the fridge to soak for 15-20 mins or until most of the custard has been absorbed.
  • Step 5

    Pour over the remaining custard, sprinkle over the remaining cheese, and then bake in the oven for 45-55 mins until golden brown on top, covering with foil halfway through the baking time if the top begins to brown too quickly. Serve with a fresh green salad.
