
Ham and Artichoke Bruschetta

Ingredients
- 80g chargrilled artichokes, plus 1 tsp oil from the pot
- ½ lemon, zested and juiced
- 2 slices rustic bread, lightly toasted
- 1 garlic clove
- 2 drizzles extra-virgin olive oil
- 6 slices Parma ham
Method
Step 1
In a bowl, toss the artichokes with the oil from the pot, the lemon zest and juice and some salt and pepper.Step 2
Rub the toasted bread with the garlic and drizzle with extra-virgin olive oil.Step 3
Drape 3 slices of Parma ham over each toast and spoon over the artichokes. Serve whole or cut each slice into 3.
