Ham and eggs have traditionally complemented one another particularly well and this recipe for breakfast or brunch is no exception.

Ingredients

  • 20 g of unsalted butter
  • 2 tbsp of flat-leaf parsley, finely chopped
  • 8 eggs
  • 1 sprinkling of chives
  • 8 slices of bread
  • 2 slices of ham
  • 50 g of creme fraiche

Method

  • Step 1

    Take off any fat from the ham and cut it into strips. Meanwhile melt the butter with the cream in a pan on a low heat.
  • Step 2

    In a dish break the eggs, add salt, pepper, ham, butter and crème fraiche and mix very lightly. Put the mixture in a saucepan with a drop of olive oil on a low heat and mix continuously to obtain a creamy consistency.
  • Step 3

    Grill the bread in the toaster, and then cut each slice in half to get 16 triangles. Place the toast on a plate, spoon the eggs on top, season and sprinkle with parsley. Serve immediately
