
Ham and Scrambled Eggs

Ingredients
- 20 g of unsalted butter
- 2 tbsp of flat-leaf parsley, finely chopped
- 8 eggs
- 1 sprinkling of chives
- 8 slices of bread
- 2 slices of ham
- 50 g of creme fraiche
Method
Step 1
Take off any fat from the ham and cut it into strips. Meanwhile melt the butter with the cream in a pan on a low heat.Step 2
In a dish break the eggs, add salt, pepper, ham, butter and crème fraiche and mix very lightly. Put the mixture in a saucepan with a drop of olive oil on a low heat and mix continuously to obtain a creamy consistency.Step 3
Grill the bread in the toaster, and then cut each slice in half to get 16 triangles. Place the toast on a plate, spoon the eggs on top, season and sprinkle with parsley. Serve immediately
