Ingredients

  • 280g pack M&S Collection Isle of Wight Summer Selection Tomatoes, roughly chopped into different sized pieces, at room temperature
  • 200g pack M&S Marble Tomatoes, ½ whole, ½ halved, at room temperature
  • 50g shelled pistachios
  • 1 tbsp M&S Rose Harissa Paste
  • 20g parmesan, finely grated
  • 1 tbsp olive oil, plus extra to drizzle
  • 25g basil, ½ chopped, ½ leaves picked
  • 260g burrata

Method

  • Step 1

    Add the pistachios to a food processor or high-powered blender and blitz until they reach the consistency of fine crumbs.
  • Step 2

    Tip the ground pistachios into a small bowl and stir in the rose harissa, parmesan, olive oil, 2 tbsp of water and the chopped basil. Season with salt and pepper to taste.
  • Step 3

    Arrange the larger tomato pieces on a large platter and drizzle with a little more olive oil and a pinch of salt.
  • Step 4

    Gently tear over the burrata, then scatter with the marble tomatoes.
  • Step 5

    Spoon over the harissa and pistachio pesto and finish with the remaining whole basil leaves. Serve immediately while the tomatoes are at their best.
