Ingredients
- 280g pack M&S Collection Isle of Wight Summer Selection Tomatoes, roughly chopped into different sized pieces, at room temperature
- 200g pack M&S Marble Tomatoes, ½ whole, ½ halved, at room temperature
- 50g shelled pistachios
- 1 tbsp M&S Rose Harissa Paste
- 20g parmesan, finely grated
- 1 tbsp olive oil, plus extra to drizzle
- 25g basil, ½ chopped, ½ leaves picked
- 260g burrata
Method
Step 1
Add the pistachios to a food processor or high-powered blender and blitz until they reach the consistency of fine crumbs.Step 2
Tip the ground pistachios into a small bowl and stir in the rose harissa, parmesan, olive oil, 2 tbsp of water and the chopped basil. Season with salt and pepper to taste.Step 3
Arrange the larger tomato pieces on a large platter and drizzle with a little more olive oil and a pinch of salt.Step 4
Gently tear over the burrata, then scatter with the marble tomatoes.Step 5
Spoon over the harissa and pistachio pesto and finish with the remaining whole basil leaves. Serve immediately while the tomatoes are at their best.
