Ingredients
- ½ red onion, finely sliced
- 1 tsp olive oil
- 150g orzo
- 200g baby spinach
- 1 tsp (approx.) smoked chilli harissa
- 100g feta, crumbled, plus extra to serve (optional)
- 1 tbsp toasted pine nuts (optional)
Method
Step 1
Fry the red onion in the oil over medium heat for 5-10 mins until golden.Step 2
Meanwhile, cook the orzo in boiling salted water to pack instructions.Step 3
Put the spinach in a colander in the sink. Scoop out a cup of pasta water and set aside; then drain the orzo over the spinach to wilt.Step 4
Return the spinach and orzo to the pan with the harissa and feta. Mix over low heat, adding a splash of the reserved pasta water to create a silky sauce. Divide between bowls and top with the onions. If you like, crumble over a little more feta and sprinkle with some pine nuts.
