Ingredients

  • 500g PACK'D Organic Summer Berry Blend
  • 1 tbsp chia seeds
  • 150g organic oat flour
  • 140g ground almonds
  • ½ tsp sea salt
  • 130g medjool dates, soaked in 120ml boiling water
  • 125g smooth peanut butter
  • 60ml extra virgin olive oil
  • 1 tsp vanilla extract
  • 100g Bio&Me Pistachio & Vanilla Granola

Method

  • Step 1

    Heat the oven to 180°C/160°C fan/gas 4. Line a square baking dish with baking paper.
  • Step 2

    Place the mixed berries into a pan over a medium heat, bring to a gentle simmer for 5 mins until softened and burst. Remove from the heat, stir through the chia seeds and set aside to thicken.
  • Step 3

    In a large bowl, combine the oat flour, ground almonds and sea salt.
  • Step 4

    Transfer the soaked dates and their soaking water to a blender, along with the peanut butter, olive oil and vanilla extract. Blend until smooth.
  • Step 5

    Pour the wet date mixture into the dry ingredients and fold together to form a thick, clumpy dough. Press the dough evenly into the base of the prepared baking dish using your fingers or the back of a spoon.
  • Step 6

    Bake in the oven for 15 mins until firm.
  • Step 7

    Remove the base from the oven and spread the berry compote evenly over the top. Scatter over the granola.
  • Step 8

    Return to the oven and bake for 20 mins until the granola topping is golden and the berries are bubbling at the edges.
  • Step 9

    Leave to cool completely in the dish before slicing into 12 bars.
