Ingredients

  • 1 tsp olive oil
  • 1 tsp cumin seeds
  • 300g diced onions
  • 480g prepped swede and carrot
  • 2 blocks frozen chicken bone broth
  • 20g flat-leaf parsley, chopped

Method

  • Step 1

    Heat the oil in a large pan over a medium heat. Add the cumin seeds and toast for 30 secs, then tip in the onions and sauté for 2 mins.
  • Step 2

    2. Add the swede and carrot, along with the frozen bone broth blocks and 600ml hot water. Leave to cook for 8-10 mins, stirring occasionally.
  • Step 3

    Take the soup off the heat, allow to cool slightly, then blitz with a stick blender until smooth; season to taste. Serve topped with black pepper and with the parsley scattered over. Freeze any leftovers for up to 3 months.
