
Hidden Veg Rolls

We’ve whizzed carrots and courgettes with lentils to create a delicious, high-protein and fibre-rich meal for kids. They won't believe they’re made from lentils! This recipes makes 80 small rolls (6 per portion if serving as a kids main).

Ingredients
- 1 small courgette
- 1 carrot, peeled
- 1 tin green lentils, drained and rinsed
- 100g cheddar
- 2 medium eggs, 1 beaten separately for egg wash
- 2 x 320g ready-made puff pastry rolls
Method
Step 1
Preheat the oven to 200 ∘C/180 ∘C fan/gas 6. Whizz the courgette, carrot, lentils and cheddar in a food processor until smooth and combined. Add 1 egg and whizz again.Step 2
Unroll the pastry sheets. Cut both in half lengthways. Spoon the lentil mixture down the middle of each rectangle. Roll up to enclose the filling. Cut into 1cm pieces. Place on lined baking trays. Brush with the egg wash.Step 3
Bake for 30-35 mins or until risen and golden brown.
