Honey & Balsamic Bruschetta

This quick and easy bruschetta recipe is perfect as a quick lunch or even as appetiser that will impress any dinner guest.

Ingredients

  • 1 ciabatta, (cut into 4 slices)
  • 20 cherry tomatoes, (Halved)
  • 2 cloves of garlic, (Chopped)
  • 100 ml of mary berry’s honey & balsamic vinaigrette
  • 1 sprinkling of fresh basil leaves

Method

  • Step 1

    Pre-heat the oven to 190°C
  • Step 2

    Cut the cherry tomatoes in half and place on a baking tray.
  • Step 3

    Chop the garlic and scatter over the cherry tomatoes, along with the vinaigrette.
  • Step 4

    Slow roast for about 30 minutes or until softened.
  • Step 5

    In the meantime, cut the ciabatta and toast until golden brown.
  • Step 6

    Spoon the tomatoes onto the toasted ciabatta along with any leftover juices then scatter with fresh basil.
