
Honey and Sesame Chicken Grain Salad

Ingredients
- 200g millet
- 1 (250g) pack cooked grains
- 1 tbsp olive oil
- 2 limes
- 5 cm piece ginger, grated
- 3 tbsp soy sauce
- 3 tbsp toasted sesame oil
- 3 tsp (approx.) runny honey
- 480g cooked chicken, shredded
- 260g mangetout, blanched and refreshed
- 250g sugar snap peas, blanched and refreshed
- 2 large carrots, shredded
- 4 salad onions, finely sliced
- 30g coriander, leaves picked
- 1 tbsp black sesame seeds
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4. Cook the millet to pack instructions, drain well and leave to cool.Step 2
Meanwhile, toss the pack of cooked grains with the olive oil and spread out on a baking tray. Bake in the oven for 10-20 mins, until toasted. Set aside.Step 3
For the dressing, zest the limes and reserve; squeeze the juice into a jug and stir in the ginger, soy sauce, sesame oil and honey.Step 4
Put the cooled millet in a bowl with the shredded chicken, mangetout, sugar snaps, carrots, salad onions and coriander leaves. Add the reserved lime zest and the sesame seeds; mix. Season well.Step 5
Just before serving, arrange the salad on a large platter. drizzle over the dressing and scatter with the cooled toasted grains.
