Ingredients

  • 2 tbsp olive oil
  • 2 tbsp Maille Dijon Mustard with Honey
  • 1 tsp ground cinnamon
  • 400g carrots, trimmed, scrubbed and halved lengthways
  • 300g greek yoghurt
  • 250g Merchant Gourmet Wholegrain Spelt
  • 2 tbsp chopped flat-leaf parsley

Method

  • Step 1

    Preheat the oven to 220°C/200°C fan/gas 7. In a roasting tin, combine the olive oil, mustard, cinnamon and a good pinch of salt.
  • Step 2

    Add the carrots, toss well to coat and roast for 30-40 mins, shaking the tin halfway, until softened and golden.
  • Step 3

    Spread the yoghurt over a platter. Warm the spelt and scatter it over the yoghurt; arrange the carrots on top and finish with the flat-leaf parsley.
