Ingredients
- 2 tbsp olive oil
- 2 tbsp Maille Dijon Mustard with Honey
- 1 tsp ground cinnamon
- 400g carrots, trimmed, scrubbed and halved lengthways
- 300g greek yoghurt
- 250g Merchant Gourmet Wholegrain Spelt
- 2 tbsp chopped flat-leaf parsley
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7. In a roasting tin, combine the olive oil, mustard, cinnamon and a good pinch of salt.Step 2
Add the carrots, toss well to coat and roast for 30-40 mins, shaking the tin halfway, until softened and golden.Step 3
Spread the yoghurt over a platter. Warm the spelt and scatter it over the yoghurt; arrange the carrots on top and finish with the flat-leaf parsley.
