Honey-Roasted Figs, Carrots, Beans and Chicken Traybake

Ingredients

  • 8 chicken thighs, skin on, bone in
  • 8 figs
  • 300 g of baby carrots, we used rainbow carrots
  • 300 g of green or helda beans, sliced length ways
  • 1 tbsp of olive oil
  • 2 tbsp of red wine vinegar
  • 0.5 tsp of ground coriander
  • 1 handful of parsley leaves, to serve
  • 0.25 loaf of sliced bread, optional
  • 1 basmati rice, optional
  • 3 tbsp of honey
  • 50 g of butter, (diced)
  • 1 tsp of ground cumin
  • 0.5 tsp of garlic powder

Method

  • Step 1

    Preheat oven to 210°C/190°C fan/gas 7 and line a large roasting tin (or two) with baking paper.
  • Step 2

    Heat a large frying pan over a medium heat. Season the chicken and add it to the hot pan, skin side down. Cook until the skin is golden brown and crisp – this will take 8-10 mins. Then, flip the chicken over and cook for another 6-8 mins to seal it all over.
  • Step 3

    Cut the top of each fig to make a cross and squeeze the base to open it up a little. Place the figs, carrots and beans into the roasting tin(s). Drizzle over the honey, olive oil and red wine vinegar before adding the butter, cumin coriander, garlic powder and some seasoning.
  • Step 4

    Gently toss to coat the vegetables.
  • Step 5

    Place the chicken thighs on top of the vegetables and make sure the figs are standing upright.
  • Step 6

    Bake in the oven for 20 mins or until the chicken is cooked through and the carrots are tender. Baste the figs and veg in all the juices halfway through the cooking time.
  • Step 7

    Remove from the oven and finish with some fresh parsley, if liked.
  • Step 8

    Serve the chicken alongside the figs, carrots and beans with lots of the cooking juices. This is great on its own, with some bread to soak up the juices or with some basmati rice.
